Last week’s Feel Good Friday post on nurturing your inner child inspired quite a bit of correspondence.

Whether re-connecting with your inner child or it’s very much alive and well, I figure today we can take things for a walk on the lighter side with something that appeals to the little kid in all of us: ice-cream!
This recipe has plenty of raw goodness, so I vote we serve up its scoops in those fun mini waffle cones. (Life’s about balance.) And if you’re having a dinner party and keeping the tone a bit posh, I guarantee if you bring these out for dessert, they will bring out the smiles big time.

Raw Berry Ice-Cream (serves around a dozen mini cones)
- 150g raw cashews (soaked overnight then drained and rinsed)
- 125g mixed organic berries (include a heaped spoonful of soaked NingXia wolfberries if desired)
- 1 small peeled banana
- 10 fresh medjool dates, pitted
- 250mL almond or rice milk
- 60g melted coconut butter
- 80mL blue agave nectar or maple syrup (Young Living supplies a beautiful organic one)
- 1 tsp pure vanilla extract or the equivalent in vanilla bean paste
- grind of sea salt
- juice of ½ lemon (or substitute with the equivalent of Young Living NingXia Red® )
- Optional: a few drops of Young Living lemon, orange or tangerine essential oil *
Put all of the above into a food processor and blend until smooth.
If you have an ice-cream maker, churn and freeze according to its instructions.
If not — even more fun! We tackle it the retro way.
- Transfer to a 2 litre (around 65 oz) container (recycle your store-bought ice-cream containers for this) and place in the freezer
- Remove every 2 hours and ‘churn’ with a stick blender. Repeat this process for around 8 hours or until you like the texture
- Serve up in mini waffle cones: wrap the bottom of each with a small square of greaseproof paper and twist it at the point
