Fish is super popular at Easter for those who celebrate it – and so is kicking back, relaxing with family and celebrating this time of year with whatever your special traditions embrace.
Much like an Easter egg hunt, we’ve searched around to source you a quick and nutritious recipe that will get you in and out of the kitchen fast so you can focus on spending time with your loved ones, and we’ve adapted a lovely one to come up with these Easy Fish Cakes with Lemon Essential Oil.
Essential oils are a beautiful way to enhance the vitality of your food – when the brand you choose is suitable for using this way and clearly indicates it on the label (as Young Living’s exquisite pure and authentic essential oils do). Easy Healthy Fish Cakes with Lemon Essential Oil (Serves 4)
Recipe adapted from Well Nourished
Prep time: 10 mins Cooking time: 10 mins
INGREDIENTS
- ½ cup/small handful fresh parsley plus 1 drop Young Living Coriander essential oil
- OR ½ cup/small handful fresh parsley plus 1 drop Young Living Dill essential oil
- OR a large handful of fresh parsley
- 1 small red onion, peeled and chopped into quarters
- 1 clove garlic, peeled
- 500g firm white fish like snapper (ask your fishmonger if in doubt), roughly diced
- one lemon: the zest and juice
- 3 drops Young Living Lemon essential oil
- Himalayan, celtic or sea salt and coarsely ground black pepper to taste
- Side salad for serving
COATING
- Sesame seeds tossed through with a sprinkle of salt
DIPPING SAUCE
- ½ cup good quality egg mayonnaise
- 1 tblesp lemon juice or 2-3 drops Young Living Lemon or Lime or Lemongrass essential oil
- Black pepper
- ¼ tsp smoky paprika
METHOD
- Prepare the dipping sauce so it’s ready to go. Simply mix all the dipping sauce ingredients and put into small individual dipping bowls for each plate (or one larger bowl if you trust everyone to not double dip!)
- Prep your plates with a lovely green side salad and the dipping sauce
- Place parsley, onion and garlic in your food processor and process until finely chopped
- Add fish, salt and pepper, lemon juice and zest plus the essential oils and process until it resembles a rough paste
- OR finely dice the above ingredients and mix well with your hands if you don’t have a processor or the size of your last power bill has you doing everything by hand again
- Dampen your hands and roll the mixture into patties (damp hands form the patties more easily)
- Roll lightly in the sesame seeds and set aside ready for cooking
- Over moderate to high heat, cook in a pan for 3-4 minutes each side until just lightly golden brown. Add enough of your favourite cooking oil like coconut, olive or macadamia nut to lightly cover the bottom of the pan, prevent sticking and add a nice brown colour to your fish cakes
- Serve immediately onto your prepped plates and drizzle over a little extra dipping sauce if you want to get fancy
