We’ve already covered a couple of Thanksgiving oil options, so today we’re taking the food path to feeling good, powered by the most virtuous pumpkin pie I could find without trawling through recipes way past the point of my kitchen tolerance.
What do I especially love about this one? No baking and it’s served frozen ! If you’re in the southern hemisphere like me and wanting to give a nod to the tradition, this chilly version is a fun, refreshing way to do it.

This raw pumpkin pie recipe is lightly adapted from a great one at The Rawtarian, an excellent site if you’re keen on exploring raw food and recipes.
Frozen Raw Pumpkin Pie with Spiced Orange Oil (serves 12 small slices)
Prep: 10 mins plus freezer time at least 1 hour
Equipment: small round springform pan lined with non-stick paper, high speed blender, food processor
Crust base
- 1 ½ cups macadamias, walnuts, pecans, hazelnuts (any or all)
- ½ cup fresh organic dates, pitted
- ¼ cup dried unsweetened coconut
- A couple of hefty pinches of sea salt
In your food processor: start with the nuts, when crumbly add dates, coconut and salt. Continue to process until well blended but airy. Turn off and test if unsure. It’s right when you press it between your fingers and it sticks together. Tip into the springform pan and press together to make the crust base. Set aside.
Filling
- 2 cups raw cashews
- 1 cup loosely chopped sweet pumpkin flesh (raw)
- 1 cup loosely chopped peeled or scrubbed carrots (raw)
- ½ cup virgin cold-pressed organic coconut oil in its liquid state (no substitutes or it won’t work) – put the jar in a container of hot water if it has solidified
- ½ cup Young Living Blue Agave or honey
- ½ cup filtered water
- 1 tbsp vanilla
- ¼ tsp sea salt
- 1 tsp cinnamon and 1/8 tsp clove OR replace with the optional spiced orange oil blend: 4 drops orange + 2 drops cinnamon + 1 drop clove essential oil (orange for happiness, cinnamon for attracting wealth, clove for a sense of protection and courage)
In a high-speed blender, combine all filling ingredients and blend from low to high speed until very silky smooth. NOTE: if not blending properly, do not add more liquid to try and loosen. Stop the blender, remove the lid, slide a knife down the inside and make an air pocket, remove knife, replace lid, resume blending. When completely smooth, pour the filling over the base, smooth the top with a spatula, cover with a lid or cling wrap.
Freeze for at least 4 hours. When ready to serve, remove from freezer, allow to sit for a minute at most before slicing — just long enough to make the job easier. Return the unsliced portion to the freezer immediately. Keeps for 1 week.
