LEMON PATTY CAKES {aka LEMON CUPCAKES}

MAKES 12

  • 1 ½ cups self-raising flour
  • ¾ cup raw caster sugar {experiment with reducing to taste}
  • 1 organic lemon, rind finely grated and 2 tablespoons juice
  • 125g butter, melted, cooled
  • 2 free-range organic eggs
  • ½ cup organic milk
  • 1 teaspoon vanilla extract
  • 2-3 drops Young Living lemon essential oil*

Preheat oven to 180°C / 350°F. Line 12 x 1/3 cup capacity muffin pans with paper cases.

Sift flour into a large bowl.

Add sugar and lemon rind. Stir until combined. Make a well in the centre.

Whisk together melted butter, eggs, milk, vanilla, lemon juice and Young Living lemon essential oil in a large jug. Add to the flour mixture and stir until just combined.  To keep them light and fluffy, don’t over-mix.

Spoon mixture evenly among the prepared pans.

Bake 15 – 20 minutes or until a bamboo skewer inserted into the centre comes out clean. Transfer to a wire rack to cool.

To decorate for a lovely dessert or special occasion, or to turn into butterfly cakes: top with a little whipped cream and a tiny dollop of lemon curd.
