The first of July brings something far more exciting than the start of a new financial year here in Australia.
Lovers of steaming hot plum pudding and roast turkey {be it soy or otherwise} know what I’m talking about: Christmas in July.

Here in Australia, it’s not just plum puddings that steam during our summer Christmases. We do, too — fanning our humid faces in sizzling temperatures more conducive to seafood served on melting ice, cold roasts and fresh salads with plenty of tropical fruits.
So when July rolls around and comfort food weather comes with it, enjoying traditional cold-climate Christmas fare really hits the spot.

INGREDIENTS (Serves 6)
- 6 cups of your milk of preference
- 1 cup organic eggwhites including 1 whole egg
- honey or Young Living Blue Agave to taste (start with 1/3 cup as a guide)
- 2 teaspoons vanilla extract or better still, the equivalent of good quality vanilla bean paste
- ground nutmeg or 1 drop Young Living nutmeg essential oil (important note: only use essential oils in food if the label says you can do so)
- ground cinnamon
DIRECTIONS
- In a medium saucepan over gentle heat, continuously whisk the milk, eggs and honey/agave until the mixture thickens slightly – enough that it can coat the back of a spoon.
- Stir in the vanilla essence/paste and one generous pinch each of nutmeg and cinnamon.
- Remove from heat.
- Cover and refrigerate until the eggnog has cooled (at least 3 hours).
- To serve, ladle into glasses – if it has thickened too much, loosen slightly with a dash of your chosen milk but don’t overdo it. Dust lightly with more nutmeg and cinnamon and if you really want to be fancy, pop a cinnamon quill into each glass.
