“An apple a day keeps the doctor away,” might not be scientifically validated, but it can’t hurt.  This healthy apple crumble recipe allows one apple per person, so consider it a comfort-foodie way of meeting your apple requirement today.

Use this versatile recipe as a base and get creative.  You can switch the apple for pear or include both. It’s an awesome way to use up any imperfectionist fruit lingering in the bowl.  You can also add a handful of blueberries with the essential oils at the end of the simmering part of the process you’ll find below.

Apples are rich in both soluble and insoluble fibre.  The skins are left on in this recipe but if you’re feeling a bit windy (and we’re not talking about breeze blowing in from Antarctica), try leaving only half the peels on next time around and see if that makes the difference.

Apples are gaining increasing mentions for contributing to digestion and a great gut microbiome (the population of microbes in the intestine).  There’s some interesting science here if you’re in the mood. 

Cinnamon and clove essential oils will add a warming, intense flavour boost. They also bring their spicy vitality to the party.  Please note:  It is imperative that you only add essential oils to food and drink when the label clearly states it’s safe to do so.  Young Living’s oils are of the necessary purity (discover why we love them so much in this short video).  Even so, not all essential oils are suitable for ingesting.  Please check the labels.

WARMING APPLE CRUMBLE with SPICY ESSENTIAL OILS

Adapted from The Healthy Chef  (Serves 6)

FILLING INGREDIENTS

  • 6 medium sized apples (any kind that takes your fancy)
  • generous splash of apple juice, water or Young Living NingXia Red®
  • 1 tsp organic vanilla extract
  • 1/2 tsp ground cinnamon or 2-3 drops Young Living Cinnamon Bark essential oil
  • 1-2 drops Young Living Clove essential oil

CRUMBLE TOPPING INGREDIENTS

  • 1  1/2 cups organic rolled oats or almond meal
  • 1/2 cup organic desiccated or flaked coconut
  • 1/2 tsp ground cinnamon or 2-3 drops Young Living Cinnamon Bark essential oil
  • 1 tsp organic vanilla paste
  • 1 – 2 tblesp Young Living Blue Agave Nectar or organic maple syrup
  • 3 – 4 tblesp light/fruity extra virgin olive oil, pure butter or your choice of nut oil

METHOD

  • Preheat oven to 160 C (fan forced)
  • Wash the unpeeled apples thoroughly and remove the cores
  • Cut into large chunks
  • Place in a large heavy based pot
  • Combine with the apple juice/water/NingXia Red plus vanilla and ground cinnamon (if using). Don’t add the essential oils just yet
  • Simmer over a medium heat for 15 – 20 mins, stirring now and then until the apples have completely softened
  • Stir in the cinnamon bark and clove essential oils, starting with one drop of each then adding a little more to suit your tastebuds
  • Lightly oil a baking dish and put the apple mixture into it
  • Put the crumble ingredients into a bowl and rub together with your fingers until just combined.  The texture doesn’t have to be completely even
  • Scatter the crumble over the top of the apple mix
  • Bake for 30  – 40 minutes or until the crumble is golden

 

Delicious in apple, delicious in nature!  Serve with thick Greek-style organic yoghurt or pouring cream.  Perfect nourishment for winter warming and easy on your digestion, too.  Reheat any leftovers for a pampering brekkie the next morning.  You’ll want to make a habit of it if you’re anything like me.
