Today’s Yummy Crunchy Wolfberry Slice proves that getting your nutrition on really doesn’t require a lot of sacrifice.
Never before have we had such a ready wealth of healthy ingredients at our fingertips. Grains and pulses that used to be weird and wonderful are now standard fare. More often than not, people stopped in the street now pronounce quinoa the right way. (Actually, there’s more than one right way. If you’re still not sure, click here.)
Likewise, the dried fruit world is more exotic. You can travel around the globe via one tray of this yummy crunchy slice in today’s recipe post!
Long gone are the ho-hum dried fruit days of sultanas and apricots. You’ll now find gems like wolfberries and goji berries in abundance in stores. But quality does make a difference in terms of the array and diversity of amino acids, vitamins and minerals and antioxidants you’ll top up on when eating them.
I love the NingXia wolfberries sold by Young Living. These are sourced from the NingXia region in China (pronounced Ning-sha) which is widely considered to be the premium source of wolfberries. So I’m happy to stay with theirs and be sure I’m getting the best nutrient value for my dollar.

Today’s recipe tastes far more wicked than it is. Hooray! And in keeping with the exotic tone, we’ve added ocotea essential oil. This one is a rare bird so let’s pause a moment to introduce you to each other.
Ocotea (ocotea quixos) originates in Ecuador, Central and South America. The oil is extracted through steam distillation of its leaves. The massive trees grow to a couple of feet in diameter and upwards of 60 feet tall. Next time you’re trekking in the Amazon wilderness on the western side of the Andes mountain ranges, go hug one. You’ll have an epiphany.
Traditionally, ocotea has been used by the locals in sweets and cakes. It’s nicknamed false cinnamon and false canilla even though its aroma is different from cinnamon. When you’re adding those precious drops of ocotea to the mixture below, inhale deeply and let your mind drift off to adventures unknown.

Yummy Crunchy Wolfberry Slice with Essential Oils
Yield: A lot.
INGREDIENTS
- 2 ½ cups organic puffed rice
- 1/3 cup organic macadamia nuts (chopped)
- 1/3 cup organic pistachio nuts (chopped)
- ½ cup organic cacao nibs
- 1/3 cup organic pitted dates (chopped)
- 1/3 cup Young Living Organic Dried NingXia Wolfberries
- 1/3 cup organic sultanas
- 1/3 cup organic teff
- 1/3 cup mixed seeds (including pepitas and slivered almonds)
- 1/3 cup Young Living NingXia Red
- ½ cup honey
- 1 cup good quality coconut oil
- 12 drops Young Living Orange essential oil***
- 8 drops Young Living Tangerine essential oil***
- 10 drops Young Living Ocotea essential oil***
PREPARATION
Combine the dried wolfberries and the NingXia Red and allow to soak overnight or until the liquid has been absorbed.
Combine and mix well the honey, coconut oil and essential oils and set aside.
Combine all the other ingredients including the reconstituted wolfberries and mix well. Add the liquid ingredients and mix until well combined.
Line a large flat tray (around 34 x 23cm) with greaseproof paper. Press the mixture into the tray and refrigerate until set. Remove from tray and remove paper. On a large cutting board and with a very sharp knife, cut into bite sized squares.
Unless you’re knee deep in snow at the moment, keep this slice refrigerated so the medium chain fatty acid-rich coconut oil does not melt when left out at room temperature. It’s the medium chain fatty acid-rich binding holding all these goodies together.
Resistance is futile. Stop at one if you must.
